Multigrain Banana and Cornmeal Pancakes

It’s been just about forever since I last posted! I’ve had a whirlwind of a summer so far! We finished our fence (FINALLY!!!), have been working on our yard and garden, and repainted our house! Our house hadn’t been painted in at least ten or fifteen years, and the metal siding was oxidizing and showing through the white paint. It was pretty awful.

We found some awesome paint at Home Depot and Lowe’s and I was able to work on it during the day, since I have the summer off. It looks amazing! If you’re curious, check out my Instagram photos on the right, or see below for a couple of my shots!

We used a satin finish, and it looks wonderful!

You probably didn’t come here to see our house projects, did you? What you really came for were these delicious pancakes my husband made.

Isn’t breakfast food the best?! It’s my absolute favorite!!

You’ll love these pancakes, and the best part is that they’re pretty healthy! This is definitely saying something, because breakfast foods aren’t always super great for you.

Multigrain Banana and Cornmeal Pancakes

Recipe adapted from Food.com.

Ingredients:

  • 1/2 cup oats
  • 1 banana, mashed
  • 2 eggs
  • 2/3 cup all-purpose flour
  • 2/3 cup wheat flour
  • 2/3 cup cornmeal
  • 2 tablespoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/3 cups milk
  • 1/4 cup canola oil

Directions:

  1. In a large bowl, combine flour, oats, cornmeal, sugar, baking powder, and salt.
  2. In another bowl, whisk together banana, eggs, milk, and oil. Once fully mixed, add to the dry ingredients just until moistened.
  3. Pour batter by 1/4 cupfuls onto lightly greased hot griddle. Turn when bubbles form on top; cook until the second side is golden brown.

These pancakes were the yummiest! We also froze our extras, and they were just as yummy for breakfast the next day.
